Hearty Vegan Banana Oat Pancakes

That your toddler will love

Oats are high in iron, protein and fat as plant foods go, and are the most nutrient dense grain, full of many minerals. It’s a complex carb that will help you to feel full longer. This is one of my go-to picky toddler recipes that I feel good about serving any time of day.

 

 

If you’re not sure they will like the hearty texture of these pancakes, whiz the oats in a blender, food processor, or coffee grinder first to make a quick oat flour.

Here is my 1 year-old daughter’s favorite breakfast recipe!

Hearty Oatmeal Banana Pancakes

  • ½ cup rolled oats
  • ½ cup whole wheat flour or almond flour
  • 1 mashed banana
  • 1-2 TBSP ground flax
  • 1 TBSP sugar
  • ½ tsp baking powder
  • 3/4 cup soymilk or other plant milk, more for desired consistency
  • Dash salt and cinnamon
  • Coconut oil for pan

Mix everything together and grease griddle with coconut oil, over medium heat. Flip when small bubbles form, and allow other side to brown. This makes about four pancakes, or six small pancakes.
